Ingredients
Nonstick olive oil spray
Two large eggs
1/4 C. or less chopped spinach ( or kale )
Pepper ( to your liking)
A pinch of shredded mozzerella
There are two ways you can make poached eggs; on the stovetop or you can buy the microwave egg poacher.

I use the microwave poacher just because there usually isn't a lot of time in the morning.
- Take the nonstick olive oil spray and spray the inside of the egg poacher.
- Break eggs into poacher.
- Take your chopped spinach or kale and cover the top of the eggs with it.
- Sprinkle some pepper over the top.
- Add a tiny bit of mozzerella.
- Microwave for approximately 1:15 sec; depending on your microwave the time may be more or less.
