Easy and Fast Breakfast

Poached Eggs

Ingredients
Nonstick olive oil spray
Two large eggs
1/4 C. or less chopped spinach ( or kale )
Pepper ( to your liking)
A pinch of shredded mozzerella

There are two ways you can make poached eggs; on the stovetop or you can buy the microwave egg poacher.

I use the microwave poacher just because there usually isn't a lot of time in the morning.

  1. Take the nonstick olive oil spray and spray the inside of the egg poacher.
  2. Break eggs into poacher.
  3. Take your chopped spinach or kale and cover the top of the eggs with it.
  4. Sprinkle some pepper over the top.
  5. Add a tiny bit of mozzerella.
  6. Microwave for approximately 1:15 sec; depending on your microwave the time may be more or less.
Egg whites should be firm and not runny, slide eggs out of poacher and enjoy! Add some orange juice and a slice of whole grain bread toasted for a complete meal.
